Lemon and Lime Cheesecake
Ingredients (for 4) 6 digestive biscuits 1 lemon (juice only) 1 lime (juice only) 40g melted butter (ask an adult to do this for you) 250g mascarpone 2 tbsp icing sugar 8 raspberries (washed) |
You will also need 4 small pots.
What to do
Wash your hands! |

1. Put the biscuits into a sandwich bag and use a rolling pin to crush them. Be careful they don’t leak out! |

2. Put the crushed biscuits and melted butter into a bowl and mix them together. |

3. Spoon the mixture into the base of each serving pot and press firmly down using the back of a spoon. |

4. Squeeze the lemon and lime juice into a separate bowl and add the mascarpone and 2 tablespoons of icing sugar. Mix it together using a fork. |

5. Spoon the creamy mixture onto the biscuit bases. Cover and put into the fridge for 2 hours. |

6. When you are ready to serve, take them out of the fridge and decorate with the raspberries. |
