Chocolate and Mandarin Pudding

Chocolate and Mandarin Pudding

Mandarins are one my favourite fruits, so this never lasts long in our house!

Ingredients

2 heaped teaspoons of instant hot chocolate powder, plus 1 level teaspoon to sprinkle

50 ml warm water

7 sponge fingers

16 mandarin segments (tinned or fresh- if using tinned, ask an adult to open the tin)

75g cream cheese

125g natural yoghurt

½ teaspoon vanilla extract

What to do

Wash your hands thoroughly!

  1. Mix the chocolate powder with the warm water.

    2. Put half of the sponge fingers on the bottom of the trifle bowl and pour over half of the drinking chocolate mixture.

    3. Arrange 8 of the mandarin segments on top.

    4. Put the cream cheese in a mixing bowl and whisk it until it is smooth. Add the yoghurt and vanilla extract and whisk again.

    5. Spoon half of the mixture over the mandarin segments in the trifle bowl until they are hidden.

    6. Add another layer of all the ingredients starting with the sponge fingers. Then, pour over the remaining drinking chocolate mixture and add the last mandarins.
   7. Pour over the remaining yoghurt and cream mixture and sprinkle 1 teaspoon of chocolate powder on top. Cover it and place it in the fridge for an hour to set.
